How to Blend the Perfect Low-Sodium Taco Seasoning from Scratch

Taco night in our house used to start with a familiar foil packet, until I read the label and realized salt was doing all the talking. Now I blend my own salt-free taco seasoning in about ten minutes, and mine lives in a labeled jar right next to the cast-iron skillet. It is the difference between dinner that tastes rushed and dinner that tastes like someone cared.

What It Is & Where It Comes From

Homemade taco seasoning is really just a measured mix of the pantry anchors taco kitchens have relied on for generations: chili powder, cumin, garlic, onion, oregano, paprika, and black pepper. Packaged brands lean on salt to carry those flavors; this version leaves the salt out entirely so you can season to taste at the table. Because there is no salt and no anti-caking agent, the spices stay bright and the blend has a cleaner, more honest heat. It works just as well on ground beef and turkey tacos as it does on beans, roasted vegetables, and rice.

The Blend: Ratios That Work

Start with a base you can remember: 3 tbsp chili powder and 2 tbsp ground cumin. Add 2 tsp garlic powder, 2 tsp onion powder, 1 tsp dried oregano, 1 tsp sweet or smoked paprika, and 1 tsp black pepper. For extra depth, stir in 1 tsp ground coriander and, if you like real heat, up to 1/2 tsp cayenne. Toast whole cumin and coriander seeds in a dry skillet over medium heat for a minute or two until fragrant, cool them, then grind; if you start with pre-ground spices, simply whisk everything in a bowl. One batch is roughly 6-7 tablespoons, enough for about three pounds of meat.

How to Use It

For 1 lb of ground beef or turkey, add 2 tbsp of the blend with 1/4 cup water and simmer until the sauce thickens. For roasted vegetables, toss with oil and about 1 tsp per serving before roasting. For rice, stir 1 to 1 1/2 tsp into the cooking water. Add the seasoning during cooking so the flavors bloom, and hold the salt until the very end, because you rarely need as much as you think.

Variations & Storage

Swap smoked paprika for sweet, or use half of each. Add a pinch of chipotle for a smokier heat. If you truly want salt in the jar, fold a little fine salt in, but remember the whole point was getting sodium out of your control. Store in an airtight jar in a cool, dark cabinet; at peak flavor expect about 6 months.
