π¨βπ³ Instructions
Preheat the oven to 200Β°C (400Β°F) and line a large baking sheet with parchment.
Toss the sweet potatoes with half the olive oil, 1 teaspoon turmeric, the paprika, salt and pepper. Roast for 20 minutes.
Meanwhile, toss the chicken with the remaining oil, garlic, turmeric, lemon juice and seasoning.
Add the broccoli and chicken to the sheet with the potatoes and roast for 12-15 minutes until the chicken is cooked through and the broccoli is tender.
Serve hot, finishing with an extra squeeze of lemon.
β οΈ Common Mistakes
- β
Overcrowding the sheet, which steams the vegetables instead of roasting them.
- β
Adding the turmeric only at the end, which leaves a raw, bitter taste.
- β
Leaving the broccoli in too long, turning it mushy and gray.
π Variations
Swap broccoli for cauliflower or green beans.
Add chickpeas to the pan for extra plant protein and fiber.
Use white potatoes instead of sweet potatoes for a milder flavor.
π§ Storage
- π¦
Keeps in an airtight container in the fridge for up to 3 days.
- π¦
Reheat in a hot oven or air fryer to restore crispness rather than microwaving.
π‘ Chef Tips
Tip 1: Marinate the chicken the night before so the turmeric penetrates deeper into the meat.
Tip 2: Cut the sweet potatoes into even cubes so they cook at the same rate as the broccoli.
Tip 3: Use boneless chicken thighs for a juicier, more forgiving result.
