👨🍳 Instructions
Simmer the apple pieces in a splash of water for about 20 minutes until very soft.
Blend the cooked apples until completely smooth.
Stir in the agave, lemon juice and cinnamon.
Spread the purée about 1/4 inch (6mm) thick on a parchment-lined baking sheet.
Dry in the oven at 170°F (75°C) for 2 to 3 hours until set and no longer sticky on top.
Cool completely, peel off the parchment and cut into strips.
⚠️ Common Mistakes
- ✕
Spreading the purée too thick, leaving a soft, sticky center after the edges are dry.
- ✕
Rushing the drying temperature and trapping moisture inside.
- ✕
Cutting while still warm, which makes the sheet stick to the knife and tear.
🔄 Variations
Swirl in a few strawberries for a two-tone fruit leather.
Replace the apples with ripe pears for a softer texture.
Add a pinch of cayenne for a sweet-spicy edge.
🧊 Storage
- 📦
Roll strips in parchment and keep airtight at room temperature for up to 2 weeks.
- 📦
Freeze flat for up to 3 months and separate with parchment.
💡 Chef Tips
Tip 1: Blend until completely silky; any lumps become hard points in the finished leather.
Tip 2: Check the edges first, since they dry faster than the center.
Tip 3: Cool fully before cutting, otherwise the strips tear and stick together.
