π¨βπ³ Instructions
Whisk together the soy sauce, honey and sesame oil into a sauce and set aside.
Pat the beef very dry, then sear it in a screaming-hot wok with half the oil for 1-2 minutes until browned. Remove and set aside.
Stir-fry the broccoli for 3 minutes, then add the garlic, ginger and pineapple and cook 2 minutes more.
Return the beef to the wok, pour in the sauce and toss to coat everything.
Serve immediately over the jasmine rice.
β οΈ Common Mistakes
- β
Overcooking the beef, which turns it tough and chewy.
- β
Steaming the broccoli by covering the pan, instead of leaving it uncovered to char.
- β
Letting the sauce burn by adding it too early over high heat.
π Variations
Swap the beef for chicken or firm tofu.
Replace the pineapple with bell pepper or snap peas for a lower-sugar version.
Add a spoon of chili garlic paste for heat.
π§ Storage
- π¦
Best eaten fresh, but keeps for 2 days in the fridge.
- π¦
Reheat in a hot pan for 2 minutes, not the microwave, to keep the broccoli crisp.
π‘ Chef Tips
Tip 1: Pat the beef dry and keep the heat high so it sears instead of boiling in its juices.
Tip 2: Cook the beef in a single layer in batches to avoid crowding the wok.
Tip 3: Slice the beef against the grain, when it's slightly frozen, for tender strips.
