Creamy Carrot & Lentil Soup
By the QuiteRecipes team (Jamy & Kaïna) | Food Service Professional, Early Childhood Expert & Parents
A naturally creamy, blended carrot and red lentil soup with ginger and a squeeze of lemon — soft, smooth, fiber-rich, and kind to a mature appetite.
This is the soup that feeds a tired or reluctant appetite without asking for chewing. Red lentils melt into velvet as they cook, carrots add sweet color, and a swirl of ginger and lemon keeps it lively. Nothing is pureed to be shapeless and sad — it's blended into a smooth, richly textured bowl that looks like a proper meal.

👨🍳 Instructions
Heat the olive oil in a pot over medium heat. Add the onion and ginger; cook 5 minutes until soft.
Add the garlic and cumin; stir 30 seconds until fragrant.
Add the carrots, lentils, and broth. Bring to a boil, then simmer, partially covered, 25 minutes until the lentils fall apart.
Blend until completely smooth (immersion blender in the pot, or in batches in a blender — cool slightly first).
Season with lemon juice and salt and pepper to taste.
Ladle into bowls; a swirl of yogurt adds protein (skip if dairy-sensitive, or use lactose-free).
⚠️ Common Mistakes
- ✕
Filling the blender while hot and splattering — let it cool, vent the lid.
- ✕
Boiling the lentils hard into the bottom of the pot; a gentle simmer is enough.
- ✕
Undersalting before blending; taste after blending once the flavors merge.
🔄 Variations
Add a parsnip or sweet potato with the carrots.
Stir in a cup of spinach after blending for extra green nutrition.
Coconut milk (canned) makes it richer and dairy-free.
🧊 Storage
- 📦
Keeps 5 days in the fridge; freezes beautifully for 3 months.
- 📦
Thickens as it rests — stir in a splash of broth when reheating.
💡 Chef Tips
Tip 1: Red lentils are the smooth-blending choice; green lentils leave a coarser texture.
Tip 2: Grate the ginger fine so it disappears into the soup, not a grainy bite.
Tip 3: Blend while still warm for the smoothest, creamiest result.
Tip 4: Portion into single servings for easy, gentle reheating.
❓ FAQ
Is the texture right for swallowing issues? This is a smooth soup, but swallowing safety is personal — confirm with your speech pathologist or care team before adding it to the menu.
Can I dial back the sodium further? Use a no-salt-added broth and skip the pinch of salt; flavor comes from cumin, ginger, and lemon.
Is this a complete meal? Add a soft-boiled egg, a swirl of yogurt, or a slice of buttered toast to round out protein for appetite's sake.
