White Bean & Kale Minestrone

A DASH-style minestrone: white beans, kale, carrots, and tomatoes in a low-sodium broth, seasoned with herbs and acid instead of salt.

- π« 1 can (400g) no-salt-added cannellini beans, rinsed and drained

- π« 2 tablespoons lemon juice

Heat the olive oil in a large pot over medium heat. Add the carrots, celery, and zucchini; cook, stirring, 6β8 minutes until softened.
Add the thyme and bay leaf, then pour in the broth. Simmer 10 minutes.
Add the beans and tomatoes (with their juice), and simmer 15 more minutes until the vegetables are very tender.
Add the kale and cook 3β4 minutes until bright and wilted.
Turn off the heat; remove the bay leaf, stir in the lemon juice and a few grinds of black pepper.
Ladle into bowls and top with torn basil.
