π¨βπ³ Instructions
**Process Base:** In a food processor, combine the soaked dates and the apple. Pulse until you achieve a thick, uniform paste.
**Combine Dry Ingredients:** Add the protein powder, flax seeds, cinnamon, and salt. Pulse again just until combined.
**Fold:** Transfer the mixture to a bowl. Fold in the popped amaranth and the coconut (or almonds) by hand. This preserves the texture of the crunchy elements.
**Press:** Line a square baking dish with parchment paper. Press the mixture firmly into the dish, ensuring an even thickness.
**Chill:** Place the dish in the refrigerator or freezer for at least 30 minutes to set.
**Slice:** Once firm, remove from the dish and slice into uniform bars.

β οΈ Common Mistakes
- β
Excess Moisture: If the apple is too juicy, it can make the bars soggy. Pat the apple pieces dry after coring, or use a slightly drier variety of apple.
- β
Over-processing: Do not over-blend once you have added the amaranth and coconut, otherwise, the bars will lose their appealing, crunchy texture.
π Variations
Nutty Upgrade: Add a tablespoon of almond butter to the mixture for extra richness and healthy fats.
Chewy Texture: Add a tablespoon of dried cranberries or raisins for an extra pop of sweetness.
π§ Storage
- π¦
Store these bars in the refrigerator in an airtight container for up to 1 week, or in the freezer for up to 1 month for long-term snacking.
π‘ Chef Tips
Soaking Dates: If your dates are dry, soak them in warm water for 10 minutes, then drain thoroughly before processing. This ensures they blend into a smooth paste.
Flax Texture: Using ground flax seeds makes the bars easier to digest and creates a smoother consistency, while whole flax seeds add an extra crunch.
