- π« 1/2 cup (100g) dry quinoa, rinsed
- π« 1 small sweet potato (200g), cubed
- π« 1 red bell pepper, sliced
- π« 1/2 small red onion, wedged
- π« 3 tablespoons olive oil, divided
- π« 1 teaspoon ground turmeric
- π« 1/2 teaspoon ground cumin
- π« 1/2 teaspoon smoked paprika
- π« 1/4 teaspoon black pepper
- π« 1 tablespoon tahini + 2 teaspoons lemon juice + 1 tablespoon water (for the dressing)

Preheat the oven to 425Β°F (220Β°C).
Cook the quinoa in 1 cup boiling water with a pinch of salt, covered, 15 minutes; fluff and set aside.
Toss the sweet potato, bell pepper, and onion with half the olive oil and black pepper. Roast 18β20 minutes.
Meanwhile, toss the chickpeas with the remaining olive oil, turmeric, cumin, and paprika. Add to the pan for the last 10 minutes so they crisp at the edges.
Whisk the tahini, lemon juice, and water into a smooth sauce.
Build bowls: quinoa, roasted vegetables and chickpeas, then a drizzle of tahini sauce.
