Fresh lettuce leaves filled with sauteed shrimp, avocado, and crunchy vegetables, served with a creamy peanut sauce. It comes together quickly and delivers a bright mix of textures. A light lunch or a friendly appetizer, either way it goes fast.
🥄 Ingredients
- 🫗 1 head lettuce (Boston or iceberg for the leaves)
- 🫗 1 lb (450g) large shrimp, peeled and deveined
- 🫗 Salt and pepper, to taste
- 🫗 1 tbsp olive oil
- 🫗 1 avocado, cut into strips
- 🫗 1/2 cucumber, cut into strips
- 🫗 1/2 bunch fresh cilantro
- 🫗 1 medium carrot, julienned (matchsticks)
- 🫗 1/2 cup sesame-ginger dressing (type Newman's Own low-fat)
- 🫗 1 1/2 tbsp creamy peanut butter

👨🍳 Instructions
**Cook the shrimp:** Season the shrimp with salt and pepper. Sauté them in a pan with olive oil until pink and fully cooked.
**Prepare the sauce:** In a small bowl, whisk together the sesame-ginger dressing and peanut butter until smooth.
**Assemble:** Gently separate the lettuce leaves. Fill each leaf with some shrimp, avocado strips, cucumber, carrot and a bit of fresh cilantro.
**Serve:** Serve the wraps with the peanut sauce on the side, either for dipping or drizzling over the filling before eating.
