- π« 2 tablespoons olive oil, divided
- π« 1/2 teaspoon ground cumin
- π« 1/4 teaspoon smoked paprika

Preheat the oven to 425Β°F (220Β°C).
Boil the lentils in plenty of salted water until tender but intact, about 20β25 minutes. Drain and set aside.
Meanwhile, toss the carrots, zucchini, and bell pepper with 1 tablespoon of olive oil, cumin, and paprika. Spread on a sheet pan and roast for 20β25 minutes until browned at the edges.
Whisk the tahini, lemon juice, water, garlic, and a pinch of salt until smooth and pourable.
Massage the spinach with the remaining olive oil and a pinch of salt.
Assemble bowls: spinach at the base, then lentils and roasted vegetables, and a generous drizzle of dressing.
