Lentil Lemon Soup with Spinach

Heat the olive oil in a pot over medium heat. Add the onion, carrots, and celery; cook 6–7 minutes until softened.
Add the garlic and cumin; stir 30 seconds until fragrant.
Add the lentils and broth. Bring to a boil, then simmer 25 minutes, until the lentils are tender but intact.
Stir in the spinach and cook 2 minutes until just wilted.
Turn off the heat; stir in the lemon zest and juice, and season with salt and pepper.
