Lemon-Herb Baked Salmon with Sweet Potato & Asparagus

Everything for a heart-healthy dinner fits on one sheet pan: salmon for omega-3s, sweet potato for potassium and fiber, asparagus for folate. A lemon-herb rub does the seasoning so the salt shaker can stay on the counter.

- 🫗 2 salmon fillets (about 150g / 5 oz each)
- 🫗 2 medium sweet potatoes (400g), cut into 1-inch cubes
- 🫗 1 bunch asparagus (250g), woody ends snapped
- 🫗 2 tablespoons olive oil, divided
- 🫗 1 lemon: zest + juice
- 🫗 2 garlic cloves, grated (optional)
- 🫗 1 tablespoon fresh dill, chopped
- 🫗 1/2 teaspoon dried thyme

Preheat the oven to 425°F (220°C).
Toss the sweet potatoes with half the olive oil and thyme on one side of a sheet pan. Roast 10 minutes.
Meanwhile, make the rub: mix the remaining olive oil, lemon zest, grated garlic, half the dill, and a few grinds of pepper.
Push the sweet potatoes aside; add the salmon (rub coated) and asparagus (tossed with a drizzle of oil) to the pan.
Roast 12–15 minutes, until salmon flakes and asparagus is tender to a squeeze.
Finish everything with lemon juice, the remaining dill, and extra black pepper. Serve immediately.
