Ginger-Turmeric Glazed Salmon with Roasted Cauliflower

Salmon glazed with ginger, turmeric, and a whisper of honey over roasted cauliflower — omega-3s and anti-inflammatory spices in one pan.

- 🫗 1 small head cauliflower (500g), cut into florets
- 🫗 2 tablespoons olive oil, divided
- 🫗 1 tablespoon grated fresh ginger
- 🫗 1 teaspoon ground turmeric
- 🫗 1/2 teaspoon ground cumin
- 🫗 1 teaspoon honey
- 🫗 1 teaspoon orange zest + 2 teaspoons orange juice
- 🫗 1/4 teaspoon black pepper
- 🫗 1 scallion, thinly sliced (greens only), to serve

👨🍳 Instructions
Preheat the oven to 425°F (220°C).
Toss the cauliflower with 1 tablespoon olive oil, black pepper, and 1/2 teaspoon turmeric. Roast 18–20 minutes until browned at the edges.
Whisk the glaze: remaining olive oil, ginger, turmeric, cumin, honey, orange zest and juice.
Pat the salmon dry and brush generously with the glaze.
When the cauliflower is 8 minutes from done, add the salmon to the pan and roast 8–10 minutes until just flaky.
Serve the salmon over the cauliflower, spoon over the pan glaze, and scatter with scallion greens.
