Easy German Potato Salad with Bacon

A warm German potato salad, rich in crispy bacon and highlighted by a sweet-and-sour mustard vinaigrette. A perfect side dish for all your barbecues.
Potato salad, served warm β the German way. Tangy mustard vinaigrette and crispy bacon bring a smoky richness that mayo-based versions can't touch.
π₯ Ingredients
- π« 2 lb (approx. 900g) Yukon Gold or red potatoes (whole, unpeeled, well washed)
- π« 1/2 tbsp olive oil
- π« 8 oz (225g) bacon, cut into 1/2" pieces
- π« 1/2 medium red onion, diced
- π« 3 garlic cloves, minced
- π« 2 tbsp fresh dill, chopped (or more parsley)
- π« 2 tbsp fresh parsley, chopped
- π« 1/4 cup apple cider vinegar
- π« 2 tbsp Dijon mustard, whole grain or coarse
- π« 1 tbsp sugar or honey (adjust to taste)
- π« 1 tsp fine sea salt (adjust to taste)
- π« 1/2 tsp freshly ground black pepper

π¨βπ³ Instructions
Cook the whole potatoes until tender, then cut into pieces once slightly cooled.
In a pan, cook the bacon until crispy, then remove it, reserving the fat.
SautΓ© red onion and garlic in the bacon fat until tender.
Prepare the dressing by mixing apple cider vinegar, mustard, sugar, salt and pepper in the pan with the onion and garlic.
Add the potatoes to the pan, toss gently to coat well with the sauce.
Fold in the crispy bacon, dill and parsley just before serving.
