👨🍳 Instructions
**Prep Fruit:** Peel the mandarins and carefully separate the segments. Ensure they are completely dry—if the fruit is damp, the chocolate will not adhere properly.
**Melt Chocolate:** Break the chocolate bar into small pieces. Place in a heatproof bowl and melt using a double boiler (or in the microwave in 20-second intervals, stirring in between).
**Dip:** Dip each mandarin segment about halfway into the melted chocolate.
**Set:** Place the dipped segments on a tray lined with parchment paper. Refrigerate for 10–15 minutes until the chocolate is firm.

⚠️ Common Mistakes
- ✕
Seized Chocolate: Never let even a single drop of water get into your melting chocolate. If water gets in, the chocolate will become grainy and clump up.
- ✕
Overheating: Melt chocolate gently. If it gets too hot, the fats will separate and it will lose its glossy finish.
🔄 Variations
The Extra Mile: While the chocolate is still wet, sprinkle with a pinch of sea salt, shredded coconut, or crushed pistachios for extra flavor and texture.
Flavor Infusion: Stir a tiny drop of peppermint or orange extract into the melted chocolate for a holiday twist.
🧊 Storage
- 📦
Keep in the refrigerator for up to 3 days. Because of the fresh fruit, these are best consumed soon after making.
💡 Chef Tips
The "Snap": Using high-quality chocolate with a higher cocoa butter content will give you a satisfying "snap" when you bite into the hardened chocolate.
Drying is Key: Patting the fruit dry with a paper towel is the most important step! Moisture is the enemy of melted chocolate and will cause it to seize or slip right off.
