Warm the zucchini noodles, then toss them into the sauce for 1 minute until just coated.
Serve topped with grated Parmesan and fresh diced tomato.
⚠️ Common Mistakes
- ✕
Overcooking the zoodles, which turns them into mush.
- ✕
Skipping the draining step, which dilutes the bolognese.
- ✕
Browning the lean 5% beef too fast over high heat, which dries it out.
🔄 Variations
Swap beef for ground turkey or lean bison.
Add diced mushrooms to bulk up the sauce with extra volume.
Use spaghetti squash instead of zucchini noodles for a change of texture.
🧊 Storage
- 📦
Store the bolognese separately from the zoodles in the fridge for up to 2 days.
- 📦
Reheat the sauce and toss with freshly spiralized zucchini to keep it crunchy.
💡 Chef Tips
Tip 1: Pat the zucchini noodles dry and keep the final toss brief, or the sauce turns watery.
Tip 2: Cook the sauce slowly so the lean beef stays tender and the flavors develop.
Tip 3: Season the beef before adding the tomatoes for a deeper meaty flavor.
❓ FAQ
Is this good for a cutting diet? Yes
it provides 33g of protein for about 370 calories and far fewer carbs than regular pasta.
Should I blanch the zoodles first? No, warming them in the hot sauce is enough; blanching makes them soggy.
Can I make it dairy-free? Just skip the Parmesan, or use a plant-based alternative.
