- 🫗 - 2 1/2 cups (300g) whole wheat flour

- 🫗 - 1 cup (250ml) warm water
- 🫗 1 boneless, skinless chicken breast (about 170g)
- 🫗 1 1/2 cups (170g) shredded mozzarella cheese
- 🫗 1/2 cup (125ml) pizza or tomato sauce
- 🫗 1/2 red bell pepper, sliced
- 🫗 1/2 cup (60g) sliced mushrooms
- 🫗 1/4 red onion, thinly sliced
- 🫗 1 tablespoon (15ml) olive oil, for brushing
- 🫗 1/2 teaspoon dried oregano
- 🫗 1/4 teaspoon salt, plus black pepper

In a bowl, mix the whole wheat flour, instant yeast and salt. Add the olive oil and warm water, and knead for 6-8 minutes until smooth.
Cover the dough and let it rise in a warm spot for 25-30 minutes until puffy.
Meanwhile, season the chicken with salt and pepper and pan-sear or grill for 6-7 minutes per side until cooked through. Rest, then slice.
Preheat the oven to 475°F (245°C) with a pizza stone or inverted baking sheet inside.
Roll the dough out on floured parchment into a large round, about 12 inches. Transfer it to the hot stone.
Spread the pizza sauce, then layer with mozzarella, chicken slices, bell pepper, mushrooms and red onion. Brush the crust edge with olive oil and sprinkle with oregano.
Bake for 12-14 minutes until the crust is golden and the cheese is bubbling. Slice and serve hot.
