👨🍳 Instructions
Season the chicken cubes with salt and pepper. Heat 1 tablespoon of olive oil in a wide pan and cook the chicken until golden, then set aside.
Add the remaining olive oil and the onion. Cook 3-4 minutes until soft, then add the garlic for 30 seconds.
Add the rice and toast for 1-2 minutes, stirring, until the edges turn translucent.
Add the warm broth, one ladle at a time, stirring frequently and letting it absorb before adding more.
After about 20 minutes, when the rice is creamy and just tender, stir in the butter and parmesan.
Fold in the cooked chicken, season to taste, and finish with parsley. Serve immediately.
⚠️ Common Mistakes
- ✕
Rinsing the rice, which washes away the starch that creates the creaminess.
- ✕
Adding all the broth at once, which turns it into boiled porridge.
- ✕
Over-toasting the rice, which gives it a nutty but hard center.
🔄 Variations
Swap chicken for shrimp or mushrooms.
Use spinach or peas folded in at the end for extra vegetables.
Finish with a squeeze of lemon for brightness.
🧊 Storage
- 📦
Refrigerate leftovers for up to 2 days in an airtight container.
- 📦
Loosen with a splash of broth when reheating to restore the texture.
💡 Chef Tips
Tip 1: Keep the broth warm so each addition absorbs without dropping the pan temperature.
Tip 2: Stir constantly but gently so the rice releases its starch and turns creamy.
Tip 3: Pull the risotto off the heat one minute before it looks finished; it keeps cooking.
Tip 4: Loosen with a splash of broth at the end for that classic flowing texture.
