👨🍳 Instructions
**Prepare Tofu:** Ensure the tofu is well-drained. Blot it with a paper towel to remove excess surface moisture.
**Combine:** Place the tofu, roasted red bell pepper, lime juice, water, garlic powder, salt, and any additional seasonings into a high-speed blender.
**Blend:** Process on high until the mixture is completely smooth and creamy. This may take 1–2 minutes, depending on your blender.
**Adjust Consistency:** If the mixture is too thick, add water one teaspoon at a time until you reach your preferred sour cream consistency.
**Taste:** Adjust seasoning—add more lime juice for extra tang, or more salt/garlic powder if needed.
**Chill:** Transfer to an airtight container and refrigerate for at least 1 hour before serving. The flavors intensify and the texture sets better after chilling.

⚠️ Common Mistakes
- ✕
Tofu Texture: Do not use silken tofu unless you want a very thin, sauce-like consistency. Firm tofu provides the body required for a "sour cream" texture.
- ✕
Over-diluting: Start with the 1 tablespoon of water; you can always thin it out, but it is difficult to thicken it back up once too much liquid is added.
🔄 Variations
Herbal Kick: Mix in fresh chives or dill after blending for a "ranch-style" sour cream.
Spicy Version: Add a pinch of cayenne pepper or a small piece of jalapeño to the blender for a spicy kick.
🧊 Storage
- 📦
This vegan sour cream keeps well in an airtight container in the refrigerator for up to 5 days.
💡 Chef Tips
Roasted Peppers: Using store-bought jarred roasted peppers is a great time-saver, but roasting your own over an open flame will give the sour cream a beautiful smoky depth.
Blending: Use a food processor if you want a slightly coarser texture, or a high-speed blender if you want a perfectly smooth, velvet-like finish.
