Vegan Pozole

This vegan take on the iconic Mexican stew centers on hominy and a rich, aromatic broth that tastes like it simmered all day. It is warming, deeply flavored, and surprisingly hearty. A big bowl of celebration.
🥄 Ingredients
- 🫗 500 g hominy (pozole corn), drained and rinsed
- 🫗 1 head of garlic (plus 2 extra cloves, minced)
- 🫗 1 tsp dried oregano
- 🫗 Mushrooms (sliced or torn into strips)
- 🫗 Water (to cover)
- 🫗 Salt to taste
- 🫗 Oil (for sautéing)

👨🍳 Instructions
**Prepare Broth:** In a very large pot, bring water to a boil. Add the head of garlic and the hominy. Reduce heat and simmer until the corn begins to bloom and soften significantly.
**Sauté Mushrooms:** In a separate pan, heat a small amount of oil. Sauté the mushrooms with the minced garlic cloves until they are browned and have released their liquid.
**Combine:** Once the hominy is tender, add the sautéed mushroom mixture to the main pot.
**Season:** Stir in the dried oregano and salt. Continue to simmer the stew for another 20–30 minutes to allow the flavors to marry perfectly.
**Adjust:** Taste and adjust salt as needed. Remove the whole head of garlic before serving.
**Serve:** Serve hot in deep bowls. Traditional toppings like shredded cabbage, sliced radishes, lime wedges, and diced onion are highly recommended.
