- 🫗 Mushrooms (sliced)
- 🫗 Zucchini (thinly sliced or shaved)

**Prep Potatoes:** Peel and slice your potatoes into very thin, even rounds (a mandoline slicer is highly recommended). If they are too thick, they won't cook through properly.
**Sauté Veggies:** In a pan, sauté the mushrooms, zucchini, and garlic until tender and the liquid from the mushrooms has evaporated. Stir in the spinach at the last minute until just wilted.
**Assemble:** In a baking dish, spread a thin layer of tomato sauce. Layer the potato slices to form the "noodles," then add a layer of the sautéed vegetables. Season with herbs and salt. Repeat the layers until all ingredients are used, finishing with a layer of sauce.
**Bake:** Cover the dish with foil and bake at 190°C for 30–40 minutes, or until the potatoes are tender when pierced with a fork. Remove the foil and bake for another 10–15 minutes to allow the top to set and bubble.
