⚠️ Common Mistakes
- ✕
Sogginess: Assemble the montaditos right before serving. If they sit for too long, the juices from the vegetables will soften the bread too much.
- ✕
Chimichurri Ratio: The classic ratio is 3 parts oil to 1 part vinegar/acid. Stick to this to ensure the sauce has the right balance of richness and tang.
🔄 Variations
Protein Upgrade: Add a small piece of pan-seared tofu or a slice of vegan chorizo on top of the beans for more substance.
Creaminess: Spread a thin layer of hummus or vegan pesto on the bread before adding the vegetable toppings.
🧊 Storage
- 📦
The components (chimichurri and chopped vegetables) can be stored separately in the refrigerator for up to 2 days. Do not assemble until you are ready to serve.
💡 Chef Tips
Bread Texture: For the best experience, rub a clove of raw garlic over the toasted bread slices before adding the toppings to get a beautiful, subtle garlic flavor.
Vegetable Prep: For a cleaner bite, remove the seeds from the tomatoes and peppers to keep the bread from getting soggy.
