- π« 3/4 cup vegan milk

- π« 1/4 tsp ground ginger
- π« 1 tsp apple cider vinegar
- π« 1/4 cup icing sugar
- π« 4β5 drops lime juice
- π« 2 drops food coloring (your choice)

**Mix Wet:** In a bowl, whisk together the vegan milk, oil, vanilla, and apple cider vinegar.
**Combine Dry:** In a separate large bowl, combine the oat flour, baking powder, sugar, cinnamon, and ginger.
**Form Dough:** Gradually add the wet ingredients to the dry. Mix until a cohesive dough forms. If it is too dry, add a splash more vegan milk; if too wet, add a sprinkle more oat flour.
**Cut & Bake:** Roll the dough out on a floured surface to about 1/4 inch thickness. Use holiday-themed cookie cutters to shape the cookies. Bake on a parchment-lined tray at 180Β°C for 10β12 minutes.
**Glaze:** Whisk the icing sugar with the lime juice, food coloring, and a drop or two of water at a time until you reach the desired consistency. Drizzle or brush over the cooled cookies.
