A rich, smoky, and authentic-tasting vegan barbacoa made with rehydrated textured vegetable protein (TVP) and a complex blend of dried Mexican chilies and aromatics.
Barbacoa is traditionally a slow-cooked meat dish, but this version uses textured vegetable protein to capture the same spicy, tender bite. Seasoned like the classic and simmered until rich, it satisfies in tacos, burritos, or bowls. Plant-based without the compromise.

- π« 3 Guajillo chilies, seeds removed
- π« 1 Ancho chili, seeds removed
- π« 1 tomato
- π« 1 slice of onion
- π« 1 garlic clove
- π« 1-inch piece of ginger root
- π« 2 whole cloves
- π« 1 tsp cumin
- π« 1 tsp oregano
- π« 1 bay leaf
- π« 3/4 cup water
- π« 3 cups TVP (Textured Vegetable Protein), pre-cooked/rehydrated

**Rehydrate Chilies:** Briefly toast the dried chilies in a dry pan until fragrant, then soak them in hot water until soft.
**Blend Sauce:** In a blender, combine the softened chilies, tomato, onion, garlic, ginger, cloves, cumin, oregano, and the 3/4 cup water. Blend until completely smooth.
**Simmer:** Add the sauce to a large pan. Drop in the bay leaf and bring to a gentle simmer.
**Combine:** Add the cooked TVP to the sauce. Let it simmer for about 10β15 minutes, allowing the TVP to soak up all the flavors and the sauce to thicken. Season with salt and pepper.
**Serve:** Remove the bay leaf before serving. Perfect for tacos, burritos, or served with rice and beans.

Bitter Chilies: Be very careful not to burn the dried chilies when toasting them. If they turn black, they will taste bitter and ruin the sauce. Toast only until they puff up slightly and become fragrant (about 30 seconds).
