Deliciously moist vegan banana chocolate muffins. Perfectly balanced with oat and all-purpose flour, these are a quick, kid-friendly treat that makes a great grab-and-go breakfast.
The ideal home for spotty ripe bananas, turned into muffins worth hiding. Dairy-free, egg-free, and studded with chocolate chips that melt into the crumb. Ripe-banana redeployment at its finest.

- π« 1/2 cup oat flour (ground oats)
- π« 1/4 cup cocoa powder
- π« 1 tsp baking powder
- π« 1/2 cup sugar
- π« 1/2 large ripe banana, mashed
- π« 1/3 cup vegan milk
- π« 1 tsp apple cider vinegar
- π« 1/4 cup oil (canola, sunflower, or melted coconut)
- π« 1 tsp vanilla extract

**Preheat & Prep:** Preheat your oven to 180Β°C and line a muffin tin with liners or grease it well.
**Activate:** In your measuring cup with the vegan milk, add the apple cider vinegar. Let it sit for 5 minutes to create a vegan "buttermilk."
**Mash & Mix:** In a large bowl, mash the 1/2 banana until smooth. Add the milk/vinegar mixture, oil, and vanilla extract. Whisk together.
**Combine:** Sift in the all-purpose flour, oat flour, cocoa powder, baking powder, and sugar. Mix until just combined (don't overwork the batter!). Fold in your chocolate chips.
**Bake:** Fill the muffin liners about 3/4 full. Bake for 18β20 minutes, or until a toothpick inserted into the center comes out clean.
**Cool:** Let them rest in the tin for 5 minutes before moving to a wire rack.
