β οΈ Common Mistakes
- β
Too Much Milk: Adding too much milk turns this thick milkshake into a runny beverage. Start with 1/2 cup, and only add more if your blender blades get completely stuck.
- β
Using Cheap Ice Cream: Cheap ice cream contains a lot of pumped air and will melt instantly into foam. Premium ice cream with high dairy fat yields that thick restaurant quality.
π Variations
Ube Coconut Shake: Swap the standard milk for rich, canned coconut milk. The pairing of ube and coconut (macapuno) is a legendary, time-tested Filipino dessert combination.
Ube Boba Shake: Pour 1/4 cup of cooked chewy brown sugar tapioca pearls (boba) into the bottom of your glass before pouring the milkshake over them.
π§ Storage
- π¦
Milkshakes are best consumed immediately. If you have leftovers, store them in the freezer in a sealed jar for up to 2 days, allowing them to sit on the counter for 10 minutes to soften before consuming.
π‘ Chef Tips
Finding Ube Cream: Look for sweetened ube condensed milk or ube halaya paste at your local Asian grocery store or online. It gives the milkshake its distinct earthy, vanilla-pistachio-like flavor profile.
For a Deeper Purple: If you want an incredibly vibrant neon purple color, you can add 1-2 drops of food-grade liquid ube extract during the blending process.
