Lean ground turkey is one of the leanest proteins a dinner can hope for, and paired with crisp peppers, garlic, and oregano it's anything but bland. Whole-wheat couscous turns it into a plate that's low in animal fat and generous in fiber — done in about the time it takes to fluff the grains.

- 🫗 1 1/2 cups (250g) whole-wheat couscous
- 🫗 1 1/2 cups (375ml) boiling water or low-sodium broth
- 🫗 500g lean ground turkey (93% lean)
- 🫗 1 tablespoon olive oil
- 🫗 1 red bell pepper, sliced
- 🫗 1 yellow bell pepper, sliced
- 🫗 1 zucchini, sliced into half-moons
- 🫗 2 garlic cloves, minced
- 🫗 1 teaspoon dried oregano
- 🫗 2 tablespoons lemon juice
- 🫗 1/4 cup chopped fresh parsley
- 🫗 Black pepper to taste

Pour the boiling water or broth over the couscous in a bowl, cover, and let stand 10 minutes; fluff with a fork.
Meanwhile, brown the turkey in a wide skillet over medium-high heat, breaking it up, 6–8 minutes until no longer pink; season with pepper. Set aside.
In the same pan, warm the olive oil and stir-fry the peppers and zucchini 5 minutes until crisp-tender.
Add the garlic and oregano; cook 1 minute until fragrant.
Return the turkey with the lemon juice; toss to warm through.
Serve over the couscous, scattered with parsley.
