👨🍳 Instructions
**Marinate:** Combine all chicken marinade ingredients in a bowl with the cubed chicken. Let sit while you prepare the dough and cheese.
**Prep Dough:** Divide your rested dough into 125g portions, shape into smooth balls, cover, and let them relax for 5 minutes.
**Cheese Blend:** Grate all three cheeses using the largest holes on your box grater and mix thoroughly to ensure an even melt.
**Cook Chicken:** Preheat a nonstick pan over medium-high heat with a little oil. Sear the chicken cubes until browned and fully cooked through. Remove and set aside.
**Form Tortillas:** Roll out each dough ball into a circle roughly 10" in diameter.
**Assemble & Fry:** Place a tortilla in a warm nonstick pan. Sprinkle a generous amount of cheese, a portion of the chicken, and a few pickled jalapeños over one half. Fold the tortilla over and cook until golden brown and the cheese is completely melted. Flip once for even crispiness.
**Serve:** Slice into wedges and serve immediately.

⚠️ Common Mistakes
- ✕
Cold Pan: Don't start cooking the quesadilla in a cold pan. If the pan isn't hot, the tortilla will become greasy/soggy before it crisps up.
- ✕
Overstuffing: It’s tempting to pile on the chicken, but keep it moderate so the tortilla can seal properly and the cheese can glue everything together.
🔄 Variations
Creamy Dip: Serve with a quick homemade chipotle ranch (mix sour cream or mayonnaise with adobo sauce, garlic powder, and fresh lime).
Veggie Boost: Add sautéed bell peppers and onions to the chicken mixture for a Fajita-style twist.
🧊 Storage
- 📦
Quesadillas are best eaten fresh. If you must store them, let them cool completely, wrap tightly in foil, and reheat in a dry pan until crispy.
💡 Chef Tips
The Three-Cheese Blend: The combination of Pepper Jack (heat), Cheddar (flavor), and Provolone (meltability) creates the perfect quesadilla experience.
The "Relax" Rule: If your tortilla dough keeps snapping back when you try to roll it out, it hasn't relaxed enough. Give it another few minutes of rest.
❓ FAQ
Do I really need to make the tortillas from scratch?
It makes a massive difference in texture—fresh tortillas are puffier and more tender than store-bought. However, if you are short on time, high-quality store-bought flour tortillas work perfectly fine.
Can I replace the tequila?
Yes, it adds a subtle acidity and complexity, but it can be replaced with a splash of white vinegar or lime juice.
