Tomato Cucumber Mozzarella Salad

A perfect summer salad combining the sweetness of fresh mozzarella, the crunch of cucumber and the flavor of cherry tomatoes.
This salad is a summer staple for good reason: ripe cherry tomatoes, cool cucumber, and creamy mozzarella under a simple vinaigrette. It tastes like a garden and a good picnic at once. Fifteen minutes and it is on the table.

- π« 1/2 English cucumber
- π« 3 cups cherry tomatoes
- π« 8 oz (1 cup) fresh mozzarella pearls
- π« 1 large avocado
- π« 1/3 cup basil leaves
- π« 3 tbsp extra virgin olive oil
- π« 1 tbsp balsamic vinegar
- π« 1 garlic clove
- π« 1/2 tsp fine sea salt
- π« 1/4 tsp cracked black pepper

Prepare the vegetables by cutting the cucumber, cherry tomatoes and avocado into bite-sized pieces.
In a bowl, mix the tomatoes, cucumber, avocado and mozzarella pearls.
Prepare the seasoning by combining the olive oil, balsamic vinegar, chopped garlic, salt and pepper.
Pour the dressing over the salad, add the fresh basil leaves and gently toss before serving.
