Tasty Avocado Shrimp Salad

A generous salad combining Cajun-spiced sautéed shrimp, creamy avocado and sweet corn, enhanced by a lemon-cilantro dressing.
This salad combines the kick of Cajun spices with the crunch of fresh vegetables and the creaminess of avocado. The shrimp carry the spice while everything stays light and bright. A bowl that does not need a recipe title to impress.
🥄 Ingredients
- 🫗 1 lb (450g) medium or large shrimp (size 31-40), peeled and deveined
- 🫗 1 tsp Cajun seasoning
- 🫗 2 garlic cloves, pressed or grated
- 🫗 A pinch of salt
- 🫗 2 tbsp unsalted butter
- 🫗 1 medium romaine lettuce (5-6 cups chopped)
- 🫗 1/2 lb (3 medium) Roma tomatoes, sliced
- 🫗 1/2 medium red onion, thinly sliced
- 🫗 1/2 English cucumber (or 3 small), sliced
- 🫗 2 avocados, peeled, pitted and sliced
- 🫗 1 cup corn kernels (from 2 freshly cooked ears)
- 🫗 Juice of one large lemon (3 tbsp)
- 🫗 1/2 small bunch cilantro (1/2 cup chopped)
- 🫗 3 tbsp extra virgin olive oil
- 🫗 1 tsp sea salt (or 3/4 tsp table salt)
- 🫗 1/8 tsp black pepper

👨🍳 Instructions
**Cook the shrimp:** Season the shrimp with Cajun seasoning, garlic and a pinch of salt. Sauté them in butter until fully cooked and golden.
**Prepare the dressing:** Mix the lemon juice, chopped cilantro, olive oil, salt and pepper in a bowl to create an emulsion.
**Assemble:** In a large bowl, arrange the romaine lettuce, tomatoes, red onion, cucumber, avocados and corn kernels.
**Serve:** Add the sautéed shrimp on top of the salad and drizzle everything with the dressing just before serving.
