When you want dinner that barely touches the carbohydrate line, this skillet is the answer: chard wilted into a garlicky bright green, quality bacon for savor, and eggs fried until fully set on top. It slips easily into a keto or very low-GI pattern, and with smoked tofu as a swap, the same pan welcomes vegetarians. Eggs cooked through, everything done in one skillet.

In a large skillet over medium heat, render the bacon until crisp; remove it. For tofu, heat the olive oil instead and brown the cubes 5–6 minutes until golden; remove.

In the remaining fat (or oil), cook the chard stems 3 minutes, then add the garlic and the leaves and sauté until completely wilted and tender. Season lightly.

Return the bacon (or tofu) to the pan, squeeze in the lemon, and spread everything into an even layer.

Make four wells and crack an egg into each. Cover the pan and cook 3–4 minutes over low heat until the whites are fully set and the yolks are cooked through — no runny center.
