Boil or steam the sweet potato 12–15 minutes until very tender; drain well.
Meanwhile cook the macaroni to just shy of al dente and drain.
Blend the sweet potato with the milk until completely smooth.
In a bowl, stir together the pasta, sweet potato purée, cheese, egg, garlic powder, paprika, and salt.
Divide into the muffin cups, top with panko if using, and bake 20–22 minutes until golden and set. Cool 5 minutes before lifting out.
