🥄 Ingredients
- 🫗 Soup Base: 500g sweet potatoes (peeled and cubed), 2 garlic cloves, 40 cl coconut milk, 2 tsp salt, 1 tsp paprika, 1/2 tsp black pepper, water as needed
- 🫗 Parmesan Tuiles: 50g parmesan, 5g flour, 30g grated cheese

👨🍳 Instructions
**Boil:** Place the cubed sweet potatoes and garlic in a pot with water. Boil until the potatoes are very tender.
**Blend:** Drain the potatoes (reserve some cooking water) and blend until smooth. Add the coconut milk and process until creamy.
**Season:** Return the mixture to the pot over low heat. Stir in the salt, paprika, and black pepper. Add reserved cooking water if a thinner consistency is desired.
**Prepare Tuiles:** Mix parmesan, flour, and grated cheese. Place small mounds on a baking sheet and bake at 180°C until melted and golden.
**Serve:** Pour the warm velouté into bowls and garnish with the crispy parmesan tuile.
