👨🍳 Instructions
Preheat the oven to 400°F (200°C).
Boil the sweet potatoes in salted water for 15-18 minutes until fork-tender, then drain.
While they cook, heat the olive oil in a large skillet over medium-high heat. Add the ground beef and brown for 6-7 minutes.
Add the onion, carrot and garlic, and cook for 4 minutes until softened.
Stir in the tomato paste and Worcestershire sauce, then pour in the beef broth. Simmer for 8-10 minutes until thickened, then fold in the peas and corn. Season with salt and pepper.
Mash the sweet potatoes with the milk, butter and salt until smooth and creamy.
Transfer the beef filling to a baking dish, top with the sweet potato mash, and sprinkle with cheddar.
Bake for 18-20 minutes until bubbling and golden on top. Rest for 5 minutes before serving.
⚠️ Common Mistakes
- ✕
Rushing the beef sauce, leaving a thin, soupy layer under the mash.
- ✕
Over-mashing the sweet potatoes, which turns them gluey and sticky.
- ✕
Baking the pie too long, which dries out the filling and burns the cheese.
🔄 Variations
Swap ground beef for ground turkey or lamb for a traditional shepherd's pie.
Use regular russet potatoes or a mix of both for a milder topping.
Add sauteed mushrooms to the filling for extra savory depth.
🧊 Storage
- 📦
Store in an airtight container in the fridge for up to 4 days.
- 📦
Freeze for up to 3 months; reheat from frozen at 350°F (175°C) until hot all the way through.
💡 Chef Tips
Tip 1: Simmer the beef filling until thick, a watery base will make the mash sink into it.
Tip 2: Mash the sweet potatoes while hot so the butter melts in and the mash stays light.
Tip 3: Spread the mash to the very edges to seal the filling and keep it juicy.
Tip 4: Rest the pie before cutting so the layers hold together cleanly.
