- π« 5 oz (142g) spring mix
- π« 1/2 lb (approx. 225g) strawberries, hulled and sliced
- π« 1/2 cup feta cheese, crumbled
- π« 1/4 cup red onion, thinly sliced
- π« 1/2 cup slivered almonds, toasted
- π« 1/4 cup extra-virgin olive oil
- π« 1/4 cup red wine vinegar
- π« 2 tbsp honey
- π« 2 tsp Dijon mustard
- π« 1/2 tsp salt (or to taste)
- π« 1/4 tsp black pepper (or to taste)

**Prepare vinaigrette:** In a small bowl, whisk olive oil, red wine vinegar, honey, Dijon mustard, salt and pepper until smooth and emulsified.
**Assemble:** In a large salad bowl, arrange the spring mix.
**Garnish:** Gently add sliced strawberries, red onions, crumbled feta cheese and toasted slivered almonds.
**Serve:** Drizzle the salad with the honey vinaigrette just before serving to preserve the freshness of the greens.
