A light, protein-forward omelette with wilted spinach and juicy tomato — bright, flavorful, and naturally low in sodium.

Spinach & Tomato Egg White Omelette

A two-minute scramble and a light omelette in one: egg whites for protein, spinach and tomato for potassium and color. Seasoned with herbs and pepper instead of reaching for the salt shaker, it's a breakfast that tastes bright and does your blood pressure a favor.

👨‍🍳 Instructions

1
👨‍🍳

Heat the olive oil in a small nonstick skillet over medium heat.

2
👨‍🍳

Add the spinach and a splash of water; cook 1–2 minutes until wilted. Season with half the oregano. Transfer to a plate.

3
👨‍🍳

Whisk the egg whites with the basil, remaining oregano, and black pepper until slightly frothy.

4
👨‍🍳

Pour the whites into the skillet, tilting to cover the base. Cook untouched for 1–2 minutes until set around the edges.

5
👨‍🍳

Top one half with the wilted spinach and tomatoes; fold the other half over. Cook 1 minute more, then slide onto a plate.

6
👨‍🍳

Finish with the Parmesan (if using) and extra black pepper.

⚠️ Common Mistakes

  • ✕

Crowding the pan with more spinach than it can hold at once.

  • ✕

Overcooking the whites until they shrink and toughen.

  • ✕

Salting the whites before cooking, which drains liquid and makes them weepy.

🔄 Variations

✦

Add a quarter of an avocado, sliced, on top for healthy fat.

✦

Stir in a spoonful of cottage cheese with the spinach for extra protein.

✦

Swap tomatoes for roasted red peppers for a different heart-friendly twist.

🧊 Storage

  • 📦

Best eaten fresh; a cooked omelette holds in the fridge for 24 hours and reheats well in a skillet.

  • 📦

Meal-prep the spinach and tomatoes ahead, then scramble whites at breakfast.

💡 Chef Tips

✦

Tip 1: Whip the whites until just frothy — a little air makes the omelette tender.

✦

Tip 2: Cook on medium, not high; whites turn rubbery over fierce heat.

✦

Tip 3: Add herbs, pepper, and a squeeze of lemon instead of salt — acid does the work salt used to.

✦

Tip 4: Using whole eggs works too; you'll trade some saturated fat for richer flavor.

❓ FAQ

Can I use whole eggs? Yes — for cholesterol specifics, ask your care team; for most people, eggs in a balanced diet are fine.

Is 320mg sodium high? For a breakfast it's modest; skip the Parmesan and rinse any canned tomato to lower it further.

Why egg whites instead of whole eggs? To keep the saturated fat lower; the yolks' nutrients then come from elsewhere in the day.
