Toast the pine nuts in a dry small pan over medium heat 2 minutes, shaking often, until golden. Remove and set aside.
Beat the eggs with the nutmeg, salt, and pepper until fully combined.
Wipe out the pan, add the olive oil, and cook the spinach 1–2 minutes, stirring, until completely wilted and its water has cooked away.
Pour in the eggs and let them set around the edges. Pull the cooked edges toward the center with a spatula as the runny top flows out to meet the pan.
When the omelet is nearly set but still glossy on top, scatter the feta and pine nuts over one half.
Cook 60–90 seconds more until the top is set — the yolk cooks through completely, no raw egg anywhere — then fold and slide onto a plate.
