A warm scrambled-egg wrap stuffed with wilted spinach and crumbled feta — folate, protein, and calcium in a portable breakfast.

Spinach & Feta Egg Wrap

Eggs, spinach, and feta — a pile of prenatal priorities folded into a warm tortilla. Spinach delivers folate and iron, eggs add choline and protein, and feta brings calcium. It cooks in one pan and wraps up in two minutes, which makes it exactly the breakfast a tired pregnant or new parent can actually eat.

👨‍🍳 Instructions

1
👨‍🍳

Warm the tortilla in a dry pan 30 seconds per side, or between two plates. Set aside.

2
👨‍🍳

In the same pan over medium heat, wilt the spinach with the olive oil and a splash of water, 1–2 minutes, until collapsed. Season with pepper.

3
👨‍🍳

Whisk the eggs with a pinch of salt, pour over the spinach, and scramble gently 2–3 minutes until just set and soft.

4
👨‍🍳

Off the heat, fold in the feta so it melts slightly.

5
👨‍🍳

Spoon the eggs down the middle of the tortilla, fold the sides in, and roll into a wrap.

6
👨‍🍳

Cut in half and serve warm.

⚠️ Common Mistakes

  • ✕

Leaving the eggs undercooked — during pregnancy, set eggs are the safe choice.

  • ✕

Overfilling the wrap so it bursts as you roll it.

  • ✕

Crowding the pan with damp spinach, which turns the scramble watery.

🔄 Variations

✦

Add chopped tomato or a spoonful of roasted peppers for vitamin C (helps iron absorption).

✦

Swap feta for shredded cheddar or avocado for another flavor.

✦

Use a gluten-free or corn tortilla if wheat isn't on your menu.

🧊 Storage

  • 📦

Best fresh; an assembled wrap keeps in the fridge for 24 hours and reheats in a dry pan.

  • 📦

Pre-wilt the spinach and whisk the eggs ahead to shave 5 minutes off the morning.

💡 Chef Tips

✦

Tip 1: Cook the eggs fully — soft or runny eggs are not advisable during pregnancy because of food safety; this recipe is fully set by design.

✦

Tip 2: Use pasteurized feta (standard in store chilled sheep/goat feta; check the label to be sure).

✦

Tip 3: Fold in the feta off the heat so it melts into cream instead of scorching.

✦

Tip 4: Double the batch — the second wrap reheats well the next morning.

❓ FAQ

Why is this good in pregnancy? Spinach (folate, iron), eggs (choline, protein), and feta (calcium) hit major prenatal priorities in one portable meal.

Are runny eggs really off-limits? Most health authorities advise fully cooked eggs during pregnancy to reduce food-safety risk; this recipe is deliberately set.

Is feta safe? Yes, when pasteurized; check the label and opt for labeled pasteurized feta during pregnancy.
