This veggie burger relies on a base of rolled oats and mushrooms to create a surprisingly meaty, satisfying patty. From the sizzle in the pan you would never guess it is plant-based. A backyard classic that holds its own.
🥄 Ingredients
- 🫗 2 cups water
- 🫗 5 cups rolled oats
- 🫗 170g mushrooms, finely chopped
- 🫗 1/2 onion, finely chopped
- 🫗 1 cup celery, finely chopped
- 🫗 1/8 cup soy sauce (low sodium)
- 🫗 1 tsp garlic powder
- 🫗 1/4 cup oat flour (as needed for binding)

👨🍳 Instructions
**Hydrate Oats:** In a large mixing bowl, combine the rolled oats with the water and soy sauce. Let it sit for 10–15 minutes until the water is absorbed and the oats are soft.
**Sauté Vegetables:** While the oats soak, sauté the chopped mushrooms, onions, and celery in a non-stick pan until they are soft and the moisture from the mushrooms has evaporated.
**Combine:** Add the sautéed vegetables and garlic powder to the soaked oats. Mix thoroughly.
**Bind:** Add the oat flour a little at a time, mixing until the consistency is firm enough to form patties. If it is still too sticky, add an extra tablespoon of oat flour.
**Shape:** Divide the mixture into 6 equal portions and form into patties.
**Cook:** Heat a non-stick pan with a light drizzle of oil. Cook the patties over medium heat for 5–7 minutes per side until they develop a crisp, golden-brown crust.
**Serve:** Serve on a toasted bun with your favorite lettuce, tomato, and vegan condiments.
