π¨βπ³ Instructions
Fill a shallow pan with water, add the vinegar and bring to a gentle simmer.
Crack each egg into a small cup, swirl the water, and slip the eggs in. Poach for 3 minutes until the whites are set and the yolks are runny, then lift out with a slotted spoon.
Toast the sourdough and spread the mashed avocado over both slices.
Lay the smoked salmon over the avocado and top with the poached eggs.
Season with chili flakes, black pepper and fresh dill, drizzle with olive oil and serve immediately.
β οΈ Common Mistakes
- β
Boiling the water hard, which shreds the eggs into ribbons.
- β
Overcooking the yolks, losing the runny center that makes this dish.
- β
Slathering avocado too thick, which makes the toast soggy before you bite in.
π Variations
Add sliced tomato or a handful of arugula under the salmon.
Swap the salmon for smoked turkey or grilled halloumi.
Use rye or multigrain bread instead of sourdough.
π§ Storage
- π¦
Best assembled and eaten fresh β poached eggs don't keep.
- π¦
Prep the avocado mash and toast ahead, then poach the eggs to order.
π‘ Chef Tips
Tip 1: Fresh eggs hold their shape when poaching; older eggs spread and feather.
Tip 2: The vinegar helps the whites set, but keep the water at a bare simmer, not a rolling boil.
Tip 3: Dry the poached eggs on paper towel so they don't water down the toast.
β FAQ
Is this a good recovery breakfast? Yes, it pairs 28g of protein from the eggs and salmon with healthy fats and slow carbs to fuel recovery.
Can I poach the eggs ahead? Poach them up to a day ahead, store in cold water, and reheat for 30 seconds in hot water.
How do I get perfectly runny yolks? Poach for exactly 3 minutes and lift gently β that gives a set white with a flowing yolk.
