A moist, tender banana bread made with almond flour — soft, naturally gluten-free slices for gentle, sustained energy in the afternoon.

👨🍳 Instructions
Preheat the oven to 350°F (175°C) and line a small loaf pan (about 8 x 4 inches) with parchment.
In a bowl, whisk the eggs, oil, honey, and vanilla until smooth, then stir in the mashed banana.
Add the almond flour, baking powder, cinnamon, and salt; fold gently until just blended — no streaks, but no overmixing either.
Pour into the prepared pan and bake for 35–40 minutes, until a skewer inserted in the middle comes out clean.
Cool in the pan for 10 minutes, then lift out and finish cooling on a rack before slicing into 10 soft slices.
⚠️ Common Mistakes
- ✕
Baking too hot, which browns the crust before the center cooks through.
- ✕
Overmixing the batter, which makes the crumb dense and heavy.
- ✕
Slicing while warm — give it the cooling rest so the pieces hold together.
🔄 Variations
Add a teaspoon of vanilla bean paste or a little lemon zest.
Use mashed pumpkin instead of banana for a seasonal version.
Sprinkle the top with finely crushed walnuts only if chewing is easy for you.
🧊 Storage
- 📦
Keeps 4 days in a sealed container, or in the fridge.
- 📦
Freeze slices flat for up to 3 months; thaw at room temperature.
💡 Chef Tips
Tip 1: Very ripe, spotty bananas give all the sweetness and softness without extra sugar.
Tip 2: Bake at gentle heat and test with a skewer — the center must be fully cooked but never dry.
Tip 3: Fold, don't stir hard; the batter stays lighter and loftier when handled gently.
Tip 4: Slice it once fully cooled so each piece cuts clean instead of crumbling.
❓ FAQ
Q
Why almond flour? It gives a moist, tender crumb that's naturally gluten-free — softer eating for sensitive teeth.
Q
Is this a dessert or a breakfast? It works as both; keep the slice modest, around one of the 10 portions.
Q
Can I leave out the honey? Yes — very ripe bananas will sweeten it entirely on their own.
