Smoked Salmon Layered Salad

This salad, often called "Shuba" or layered salad, is a festive dish that plays on contrasts of colors and textures. Each layer is separated by a thin spread of mayonnaise, allowing the flavors to meld.

    4 medium carrots (approx. 1 lb)

    4 large hard-boiled eggs
  • 🫗
    1 to 1 1/2 cups mayonnaise
  • 🫗
    Chives or green onions, chopped for garnish

**Cook the vegetables:** Boil or steam the potatoes, beets and carrots until tender. Let them cool, peel, then grate each vegetable separately.

**Prepare the eggs:** Peel the hard-boiled eggs and grate them (or chop finely).

**Layer:** In a large clear glass bowl or a dish with high sides, stack the ingredients in distinct layers. Alternate the vegetables, eggs and smoked salmon, adding a thin layer of mayonnaise between each layer.
