An original potato salad where the potatoes are lightly smashed to better absorb the creamy and tangy dressing.
This potato salad lightly smashes the potatoes for a rustic texture with an irregular surface that holds dressing beautifully. Pickles and capers add tang while the creamy dressing ties it together. The potato salad that thinks outside the cubed box.

- π« 2 lb (approx. 900g) small gold potatoes (or red)
- π« 1 tsp fine sea salt (adjust to taste)
- π« 1/2 tsp freshly ground black pepper
- π« 1 cup dill pickles, chopped (adjust to taste)
- π« 1/4 red onion (approx. 1/2 cup), finely chopped
- π« 1/2 cup celery (approx. 2 stalks), finely chopped
- π« 1/4 cup fresh dill, chopped (plus extra for garnish)
- π« 1 1/2 tbsp capers, chopped
- π« 1/2 cup mayonnaise
- π« 1 1/2 tbsp Dijon mustard

Cook the potatoes until tender.
Lightly smash the potatoes (without mashing them completely) to give them a rustic texture.
In a large bowl, mix the mayonnaise and Dijon mustard to create the sauce base.
Add the smashed potatoes, pickles, red onion, celery, capers and fresh dill.
Season with salt and pepper, then gently toss to coat all ingredients evenly.
Garnish with a bit of fresh dill before serving.
