Cream of Mushroom Soup

There's nothing humble about a good mushroom soup once the mushrooms earn their golden-brown first. Sautéed slowly, then blended with vegan milk, they turn silky and deep without a drop of cream. 🥄 Ingredients
- 🫗 2 cups raw mushrooms, washed and sliced
- 🫗 1/2 bell pepper
- 🫗 1 cup vegan milk
- 🫗 1 tbsp onion, finely chopped
- 🫗 1 tbsp oil
- 🫗 Salt and pepper, to taste

👨🍳 Instructions
**Sauté Aromatics:** In a pot, heat the oil over medium heat. Sauté the onion and bell pepper until soft and fragrant.
**Brown Mushrooms:** Add the mushrooms to the pan. Cook until they have released their moisture and have started to turn golden brown.
**Simmer:** Add the vegan milk to the pot. Let it simmer gently for 5–7 minutes, allowing the mushroom flavors to infuse into the milk.
**Blend:** Remove from heat. Use an immersion blender directly in the pot to blend until smooth. If you don't have an immersion blender, transfer to a standard blender (be careful with the heat!).
**Season:** Add salt and pepper to taste. If you prefer a thinner soup, add a splash more milk or water until you reach your preferred consistency.
**Serve:** Serve warm, perhaps with a garnish of fresh herbs or a few sautéed mushroom slices reserved from step 2 for texture.

Rushing the Mushrooms: Mushrooms have a high water content. If you don't cook them long enough to brown them, the soup will taste "raw" and won't have that deep, earthy mushroom flavor.
