Shredded, softly braised chicken under a cumin-infused carrot mash with tender peas — a comforting shepherd's pie built for easy chewing.
A shepherd's pie built for mature appetites swaps the minced meat for softly braised shredded chicken and swaps potato for a pillow of cumin-kissed carrot mash. 👨🍳 Instructions
Put the chicken thighs in a pot with the broth and thyme; cover and simmer gently for 25–30 minutes until the meat pulls apart easily.
Meanwhile, boil the carrots in lightly salted water for 12–15 minutes until very tender, then drain.
Lift the chicken onto a board and shred with two forks; strain and reserve a little of the cooking broth.
Mix the shredded chicken with the peas, a splash of the reserved broth, and a pinch of pepper; spread it into a small baking dish.
Mash the carrots with the olive oil, milk, and ground cumin until completely smooth, then spread over the chicken like a cloud.
Bake at 375°F (190°C) for 15 minutes until the mash is set and everything is hot. Rest 5 minutes before serving.
⚠️ Common Mistakes
- ✕
Boiling the chicken hard and fast, which makes tough shreds instead of soft ones.
- ✕
Under-mashing the carrots; any little lump shows up in the topping.
- ✕
Baking so long the mash edges dry out — 15 minutes is plenty.
🔄 Variations
Use cooked turkey breast instead of chicken thighs.
Add half a cup of cooked lentils to the base layer for extra fiber.
Top with a smooth sweet potato mash for a change.
🧊 Storage
- 📦
Keeps 3 days refrigerated; reheats beautifully in a moderate oven.
- 📦
Freeze in portions for up to 2 months.
💡 Chef Tips
Tip 1: Simmer the chicken gently — a rolling boil tightens the meat right back up.
Tip 2: Whisk the cumin into the carrots at the end so its aroma stays fresh.
Tip 3: The olive oil makes the carrot mash glossy without needing any butter.
Tip 4: Let the pie rest before serving so it holds its shape on the spoon.
