Chickpea Veggie Patties

A nutritious and protein-packed vegan patty made from hearty chickpeas, fresh carrots, and cauliflower. These versatile patties are perfect for burgers, salads, or as a healthy lunch staple.
Fiber and plant protein, in patty form. Grated cauliflower and carrots bring color, texture, and vitamins, while chickpeas hold it all together — they keep their shape beautifully, so they're built for meal prep.
🥄 Ingredients
- 🫗 2 cups cooked chickpeas, drained and rinsed
- 🫗 1 cup fresh carrots, finely grated
- 🫗 1 cup fresh cauliflower, finely grated (or pulsed into "rice")
- 🫗 Herbs and Spices: Oregano, cumin, basil, salt, and pepper (to taste)
- 🫗 *Optional: 2–3 tbsp of flour (oat or chickpea flour) if you need extra binding*

👨🍳 Instructions
**Mash:** In a large mixing bowl, mash the chickpeas using a potato masher. You want a coarse texture—some whole beans remaining is perfect for mouthfeel.
**Combine:** Add the grated carrots and cauliflower to the mashed chickpeas.
**Season:** Add your choice of herbs and spices (oregano, cumin, basil, salt, and pepper). Mix thoroughly.
**Bind:** If the mixture feels too loose, add a tablespoon of flour at a time until the mixture holds together when pressed into a ball.
**Shape:** Form the mixture into 4–6 equal-sized patties.
**Cook:** Heat a lightly oiled pan over medium heat. Cook the patties for 5–7 minutes per side until golden brown and crispy on the outside.
