👨‍🍳 Instructions

1
👨‍🍳

**Prep Base:** In a large bowl, mash about 3/4 of the black beans with a fork or potato masher, leaving the remaining 1/4 whole for texture.

2
👨‍🍳

**Combine:** Add the sautéed onion/pepper mix, corn, bread crumbs, oil, and spices. Mix well.

3
👨‍🍳

**Adjust:** Slowly incorporate a tablespoon or two of the reserved black bean broth until the mixture is cohesive enough to form into patties without cracking.

4
👨‍🍳

**Form:** Divide the mixture into 4 equal portions and shape into patties.

5
👨‍🍳

**Cook:** Heat a non-stick pan with a little oil over medium heat. Cook the patties for 5–7 minutes per side until a nice, dark crust forms and they are heated through.

6
👨‍🍳

**Serve:** Serve on a toasted bun with your favorite vegan toppings like avocado, lettuce, tomato, or your Vegan Nacho Cheese (VG-0073).

⚠️ Common Mistakes

  • ✕

Too Much Moisture: Do not add all the bean broth at once! Add it sparingly. If the mixture feels too wet, add more bread crumbs to compensate.

  • ✕

Rushing the Rest: Let the formed patties sit in the fridge for 15 minutes before cooking. This helps the bread crumbs hydrate and "glue" the patty together.

🔄 Variations

✦

Tex-Mex Style: Add a spoonful of chipotle paste or finely chopped cilantro to the mix for a smoky, herbal flavor.

✦

Gluten-Free: Swap standard bread crumbs for gluten-free oats or almond flour.

🧊 Storage

  • 📦

These freeze incredibly well! Wrap uncooked patties individually in parchment paper and store in a freezer bag for up to 3 months. Cook straight from frozen, adding an extra 3–4 minutes per side.

💡 Chef Tips

✦

The "Bake" Alternative: For an even firmer burger, bake the patties at 190°C for 20 minutes (flipping halfway through) before searing them in the pan. This helps them hold their shape better.

✦

Flavor Depth: Toast your spices (cumin/oregano) in the pan for 30 seconds before adding them to the bean mix to "wake up" the essential oils.
