This salad combines varied textures β the softness of roasted sweet potato, the crunch of nuts and the tenderness of dried fruit β to create a complete and festive dish.

- π« 1 1/2 lbs (approx. 700g) sweet potatoes (2 medium or 3 small)
- π« 1 tbsp olive oil
- π« 1/2 tbsp maple syrup
- π« 1/2 tsp sea salt
- π« 1/4 tsp black pepper
- π« 1 bunch kale (about 10 cups chopped)
- π« 1 apple, thinly sliced
- π« Pecans (lightly toasted if desired)
- π« 1/2 cup dried cranberries or pomegranate seeds
- π« 2 oz (1/2 cup) crumbled goat cheese
- π« 3 tbsp apple cider vinegar
- π« 1 tbsp maple syrup
- π« 1 tbsp Dijon mustard
- π« 1 garlic clove, minced
- π« 1/3 cup extra virgin olive oil

**Roast:** Season the sweet potatoes with olive oil, maple syrup, salt and pepper, then roast until tender.
