Preheat the oven to 400°F (200°C).
Pat the salmon very dry, season the flesh with salt and pepper, and place skin-side down on a lined baking sheet. Drizzle with half the olive oil and roast 12–15 minutes until opaque in the center and the flesh flakes easily.
About halfway through, heat the remaining olive oil in a wide skillet over medium-high heat. Add the mushrooms and cook without stirring for 3–4 minutes until deeply browned underneath.
Add the garlic and the kale in handfuls, tossing until wilted. Pour in the tamari and sesame oil and cook 2–3 minutes more until tender and glossy.
Squeeze the lemon over the greens, taste for seasoning, and serve alongside the salmon.
