Rice Cooker Chicken Teriyaki Bowl
By the QuiteRecipes team (Jamy & KaΓ―na) | Food Service Professional, Early Childhood Expert & Parents
A whole teriyaki dinner cooked in the rice cooker: rice on the bottom, glazed chicken and vegetables steaming on top, finished with scallions and sesame. One pot, zero fuss, real restaurant shine.
The rice cooker is the dorm kitchen's hidden jewel β mostly it just makes rice, but give it a chance and it quietly cooks a whole dinner at the same time. Here, rice simmers on the bottom while seasoned chicken and tender vegetables steam in a glossy teriyaki glaze on the rack above, every flavor soaking into the grains below. When the machine sings done, you lift out a complete, saucy chicken teriyaki bowl with zero stirring, zero watching, and remarkably little washing up. We love it for the nights when the oven feels like an appointment and the rice cooker feels like a friend.

**Lift the tray**, transfer the chicken and vegetables to a bowl, and pour the remaining glaze into a small pot; add the cornstarch slurry and simmer 2 minutes until glossy.
**Serve the rice** in bowls, top with the chicken and vegetables, spoon over the thickened glaze, and finish with scallions and sesame.
β οΈ Common Mistakes
- β
Too much liquid. Trust the rice cooker's cup markings over freehanding it.
- β
Skipping the thickening step β you end with soy soup instead of a clingy glaze.
- β
Overcrowding the tray so the chicken steams rather than browns-coats.
- β
Cutting chicken too big β thick chunks stay raw in the middle of the cycle.
π Variations
Tofu version: Use firm tofu in place of chicken for a meatless evening.
Spicy: A pinch of chili flakes or a splash of Sriracha in the glaze.
Veg-forward: Add mushrooms, snow peas, or bell pepper to the tray.
Lighter glaze: Use half the honey and add a spoon of pineapple juice for a tangier teriyaki.
π§ Storage
- π¦
Keeps 3 days refrigerated; the rice re-steams well with a splash of water. The glaze keeps a week separately β teriyaki on demand.
π‘ Chef Tips
Rinse the rice well for separate grains; it also balances the salty-sweet glaze beautifully.
Keep chicken pieces bite-size so they cook through in the steaming cycle.
Thicken the glaze separately at the end for that shiny, coat-a-spoon teriyaki feel.
Don't peek. Every time you lift the lid, the rice steams off its perfectly cooked spot.
β FAQ
Can any rice cooker do this?
Yes β as long as it has a steaming tray or a removable basket, or you can set a foil bowl on the rice.
Does the chicken actually cook through?
Bite-size chunks on the steamer above simmering rice steam fully in the standard cycle β about 20β25 minutes.
Is teriyaki sauce gluten-free?
Use tamari instead of soy sauce and it is; check your rice vinegar label too.
How many calories?
About 560 per bowl β a complete, satisfying dinner that barely dirties a pot.
